Part of London’s financial and business district, Bishopsgate sees thousands of commuters pass by every day but the area has only a few hundred residents. As a result, this GrabThai location focusses on providing high-quality grab-and-go meals to office workers. The Bishopsgate branch has shorter opening hours than other GrabThai locations, reflecting the make up of the local area. Despite this, footfall is high and delivery requests are constant. The fit-out for the new location had to suit the demanding audience found in the area, and Fernwood Interiors were happy to help. 

Objectives

Due to its location, the Bishopsgate eatery experiences an extreme surge during the lunchtime rush. As GrabThai promises to provide high-quality, fresh food in a convenient and flavourful package, it was essential that the public area, serving area and food preparation area were all as efficient as possible and also worked seamlessly together. Despite a small footprint, a high turnover was expected, meaning that storage was at a premium and clever solutions were required to maximise storage space while also ensuring that both raw ingredients and prepared foods were kept appropriately.

Requirements

The new Bishopsgate branch of GrabThai is within the Exchange Arcade. This small shopping and dining area is owned by a certain European bank, and both the restrictions due to the location and the landlord’s exacting requirements complicated the fit-out. A design scheme was required which would allow the deliberately simple GrabThai brand to stand out within the arcade without looking out of place in the traditionally-styled building. Updates to the property were also required to meet the stringent health and safety requirements that GrabThai holds as well as government targets.

Process

GrabThai has a distinctive automated ordering system which needed to be properly installed and tested, however due to the nature of construction, this most critical step could only be accomplished towards the end of the 4 week fit-out programme. Fortunately, careful planning ensured that even this step had been fully accounted for and the fit-out was completed with few hitches. The lunchtime surge pattern placed heavy demands on the staff and their processes, and the fit-out needed to be designed to support them through the busy periods, and robust enough to withstand the peak footfall. 

Outcome

Fernwood Interiors are proud to have completed this, our second fit-out for GrabThai. Each location we’ve worked on has been distinct, with its own unique challenges. The Bishopsgate location was a relatively straightforward space to work in, however red-tape and logistics added their own challenges to the project. Despite these hurdles, the project was a success and we are proud to have helped launch this new lunchtime spot which is justly popular with local office workers and another jewel in the GrabThai crown. We look forward to continuing to work with the chain as they expand.
